Chia Pudding with Cashew Parfait & Strawberry Jam

This is a mouth-watering healthy breakfast option, a combination of flavors and explosion of tastes which will definitely bring a long lasting smile on your face. What a great start of the day! 🙂
Chia seeds contain omega 3 fatty acids, carbohydrates, protein, fiber, antioxidants, iron and calcium. A recommended daily intake of chia is about 2 TBSP meaning a roughly estimation of 145 calories, 4 grams of protein, 9 grams fat, 12 grams carbohydrates and 10 grams of fiber, plus vitamins and minerals. Ingredients
- Strawberry Jam
- 300 gr. ripe strawberry / frozen strawberry / mix of berries
- 3 tbsp coconut sugar
- Cashew Parfait
- 1 cup activated cashews
- 1/2 cup filtered water/ coconut water
- 1 1/2 tbsp maple syrup/ date syrup / other sweetener
- 1/4 tsp vanilla powder / vanilla extract (optional)
- Chia Pudding
- 4-5 tbsp chia seeds
- 1 cup oat milk / coconut / almond
- Top with fresh fruits
Instructions
- Strawberry Jam
- If you are using fresh strawberries (other berries) cut them in small cubes first. This doesn't apply to frozen ones.
- Add berries to a pan and start cooking adding the coconut sugar. Keep always an eye on it and mix continuously until a jam consistency is achieved about 10-15 min.
- Cashew Parfait
- Add all the ingredients in a blender and mix until a smooth consistency is achieved about 40 seconds. Set aside.
- Chia Pudding
- Add chia seeds to a bowl and slowly while pouring the milk mix constantly with a fork to avoid forming lumps. Ideally prepared it ahead and leave it overnight or otherwise give at least 20 minute for the chia seeds to expand. Add the toppings and enjoy!

- By far my favorite way to eat a chia pudding!
